Lemon Cupcake Recipe

Made lemon cupcakes during the public holiday!
And to me, it was a success! Cause it came out good looking, and had the lemon taste.
Was kinda worried don't have the lemon taste.
 
This recipe is adapted from Sallys Baking Addiction
 
Perfect recipe for me!
I skipped the vanilla frosting because I don't like frostings. hehe.
 
So, anyway, here's a summary of what are the ingredients.
 
Anti-clockwise from the butter (bottom right):
(1) 115g unsalted butter at room temperature, 200g fine caster sugar
(2) 190g all-purpose flour , 2 teaspoon baking powder, 1/2 teaspoon salt
(3) 2 freshly squeeze lemon + zest; 2 medium eggs at room temperature with 2 teaspoons of vanilla extract
(4) 120ml milk
 
 
They are in sequence of how I make the batter.
So beat the eggs and sugar for 2 full minutes (per Sallys guide) using medium high speed. I'm using Kenwood electric beater, present by the RSVP girls. :) use speed number 3. 
Add in (2) slowly in portions, keeping speed number 3. This takes another 3min.
After that add in the eggs, another 1min medium high speed, then switch to low speed.
With low speed, I added the lemon juice and the milk.
 
Per the guide, the batter should be thick and cannot over beat it.
So, after I added the juice and milk, I just made sure it blended into the rest of the batter and I stopped.
It should feel thick and difficult to spoon it for the cupcake filling.
 
Bake at 278 degree Celsius, for 20min.
I used mini cupcakes, but I still kept it at 20min and still okay.
For the standard cupcake size, I had to prolong the time to about 23-25min.
 
 
 
Because mine didn't have any frosting, I was worried that it might taste sour by itself so I added oreo cream on top.
For me, I like it sour lah so without the oreo also can.
But GGH prefers with oreo topping.
 

 


This is by far one of my best made cupcake. hahaha.
Making another batch now for my girls, but I didn't add too much lemon cause worried too sour. haha..
Anyway, hope to hear good comments from them. :p

First Bento Try

My first bento try was a success! So pleased with myself!
I joined the Bento workshop organised by Naturel and managed to make a decent looking bento!
 
So here's an overview of the ingredients.
We were told to make one sample for teaching purposes then another one to bring home ourselves.
It was really fun and turns out to be quite easy!
Easier than I thought! But of course, there are some things are tougher to create!

Proud to present my first bento!!!  Love my end result, was really surprised I could do this without much assistant!
Shall make more !! :):):)
 
Tips: When the rice is hot, keep it moist so that molding is easier and will stick.

Cooking Mama - Practical Test 1 Cupcake



Seriously, what's wrong with twitter??? Why can't I post photos??? Isit too big?
Anyway, shall not complain. Heng, now I got free time can blog. hehe.
So....
Today I decided to go grocery shopping and do a practical test myself! RED VELVET CUPCAKE.
Super fail... I followed the instructions... and the finishing came out quite okay... like it's supposed to be flowy when u scoop it up.  it did!

But when I send it to baking, the instruction stated it should be approximately 20-25 min. But mine... I left it will 30min, the cupcake still wasn't ready! Supposedly, if you stick a toothpick inside the cupcake, it should come out clean. But mine wasn't. But when I see the outer skin, it seems dry and cracked already.

So I decided to stop after baking for 35 minute. I tried, but the inside was still sticky. I tasted it, it felt like you are eating kuey kuey. but the taste is fine, like i eat the outer skin, the taste was really red velvet. haha..
So what's wrong with my cupcake? anything too much or too little?
The temperature was the same as the instruction too... hmm...

I wonder. Any ideas? Dig your Secondary books? haha..

Cooking Mama Lesson 1 - Cupcake

Tada! I'm not lagging behind. I'm gonna jot down when I did this week! Without study, I have more time to laze around. hehe...

Friday, Irene (my ex-boss) and I went for a cupcake class at Little House of dreams located right at the Basement of Clarke Quay The Central!

The place is quite small hence the class is around 12 people only.
The place is very pretty! Very nicely decorated! Saw the cakes that they customise, very unique and pretty!
My favourite - Rosette Ombre Cake!!! PRETTTTY!!!!




What we learnt was Vanilla Cupcake! The class was very helpful, explaining each and every step of how to do and what to look out for to see if you can continue to next step. The teacher also comes round the table to make sure we did it correctly and each step texture is correct.


After that, she taught us how to fold the piping bag.. so that it doesn't flow the other way out.

And us filling up the lining tray without any mess! :)




After that, while the cupcake was baking in progress, she taught us nice and cute 3D decos! We learnt how to make a flower, ladybug, caterpillar! Mine was successful! hehe... Didn't put alot of deco  cause it's sweet and I wanna try my original taste of the cupcake. But I love my flower that I made! *beams*
GH tried and it tasted good too! Not very dry. He finished 4! :):):)



Shall try going for some chinese cooking classes... and shall start baking for some of my lovely friends!!!!
